Sukenari HAP40 210mm k-tip gyuto SOLD
Tried this one for the second time; I just don’t think HAP40 is my jam nor the Sukenari k-tip. I love the YXR7 regular gyuto though. $225

Kohetsu HAP40 240mm Togatta gyuto
Pretty much a catch and release considering how little cooking I’ve been doing these days. I was pleasantly surprised by this one ... but then I went head to head with my Kashima, as everyone knows by now, my favorite laser. Still undefeated. $200

Hitohira Tanaka Kyuzo Blue #1 Migaki 240mm gyuto, Blackwood handle. I was hoping this one would be the winner because it’s such a nice knife, but I can’t justify keeping this and the Kagekiyo and so this one goes. I’ve sharpened a couple times, proper wide bevel method using the same stones on the bevels (Aizu and some natural finishers). Left the patina on to show where the bevels are still concave but I’m gonna polish it and add another picture. $450
