For your consideration,
A wakui 210 Gyuto bought one year ago at CleanCut. I used it quite a lot for a few months, at home. It came with a weak factory edge and a little thick behind the edge. The blade needed some fine tuning. I’ve sharpened and thinned the blade several times. Low spots and the original sandblasted kasumi are now gone. Now it performs just the way I want it, and it has a pretty decent kasumi finish (see separate post below).
Edit (this is now taken care of and there are no discolorations left) (Disclaimer: there are some very light rust stains on the core steel after polishing. I can take these out (and sharpen the blade) if the buyer so wants.)
Specs:
210x47,7
Taper (at the handle: 4,6 mm/10 mm from the tip 1,6 mm)
Shirogami 2 core, stainless cladding, KU
182 grams
Very nice fit and finish (polished spine and choil). Perfect for someone looking for a first J-knife or just a solid performer.
The knife sharpens up very well and It is very easy to maintain.
Edit; I’m asking 215$ (Old price) shipped within the EU (now asking 217$). That’s a fair bit less than what I bought it for).
As always with the kotte, this knife is not BNIB and not in pristine condition. It’s used and it’s meant to be used!
Thanks for watching!
