Curious why he strains the eggs?
here's a great note on technique:

never crack your eggs on the edge of something like he does in the video, it greatly increases the likelihood of ending up with bits of shell in the egg, which is another reason I have seen people strain eggs.

Interesting technique mincing the onion (at least with the vertical slices).

you can find alot of guys doing fancy sushi garnishes on youtube that do the same cut, you can practice by putting a chop stick or something similar under the heel of your knife.

i had read somewhere the guy in the video is a chef which I wouldn't necessarily doubt.

Wife is out of town for 10 days beginning of next month....I totally gotta try this out. Wonder how many eggs will have to die for me to get the technique down of rolling the omelet on itself. Don't have a cat for the quality control though...guess I'll have to use one of our parrots.
 
I tried it the other night. Not as easy as it looks. barely got the third omelet try to have some partial sliding down on itself on top of the rice. :cheffry:

now I don't know alot about the Japanese omlettes but he looks like he's done just about a perfect french omlette there. Good luck ;)

Great vid, and very impressed that they used MONO for the soundtrack. Such a great band.
 
I just wanted to share, this is the guy I call chef on a daily basis. He is a really passionate guy. Hopefully they will want to keep me after probation. But even if not, in only a week I feel I have learned more than I have in the last few years working elsewhere. More omurice oddly.

He did a good job of restoring that knife. Wonder if it had been on a commercial fishing boat or something. It looks like some I've seen that have been sloshing around in sea water for a few months.
 
Awesome post DamageInc. I love these work in progress vids.

The sharpening wheel being used at 3:23 is probably the most stable I've seen. All the others I've seen on video give off some serious vibrations.
