on my list of things to try! Thanks
I did the chicken too. Was very surprised that the marinade barely flavored the chicken even on an overnight+6 hour marinate. I guess I'll try injecting next time? Just surprised, I expected the orange juice to do so much more.on my list of things to try! Thanks

Which Mazaki's are the top 2?
Lol what?Which Mazaki's are the top 2?
Oh right, I knew that! That's a running joke when people don't list the makers in their pics we always say it's Mazaki.
everytime the joke is explained, a part of me dies a bit insideThat's a running joke when people don't list the makers in their pics we always say it's Mazaki.
Yes I got it hereWas that the Fellipi listed a while ago? Looks so nice! He nails ku on wrought, which I understand (from conversations with a few makers) to be very difficult
Why do you keep saying FL gentleman? Tony is in Virginia.Low key obsessed with the laseur (Florida gentleman)… choil shot does not work because of the finger guard (kinda like a messermeister) so I had to use and compare to other stuff I had to form a keep or not keep on this outside of just looking. Pics cannot really capture the proportions right as the s grind, half heel guard distorts what you might judge from a pic.
This is possibly the best zero maintenance knife, no frills, all performance.
Food release - check,
handle comfort - double check,
thick spine out the handle for comfortable pinch - check,
super thin taper to get to a thin grind after the S cut - check
made entirely with low maintenance material - check
been stalking tony since @ashy2classy recommendation of him here on KKF and I think this is a winner too (as i'm sure all of his stuff is). maybe one day i'll land a laseur honyaki / cleaver... I keep reminding him...
*wife feedback - she thinks not enough makers do the finger guard. outside of the feeling of safety it provide a lot of "comfort" in extra width where your index finger goes. Kamon does a extreme taper there for a seamless transition, but i think this cut is possibly better for the overall grind of the knife....

Looks nice, what kind of 3m tape exactly?Got the hunk o Maple rack installed on the office wall. Missing paint and bit of drywall from the previous floating magnets I had...that 3M tape is strong!

Whatever comes on these guys. A downward pop with the hammer didn't do anything but dent the wood. Grabbed my channel locks and had to twist them off.Looks nice, what kind of 3m tape exactly?
