Just having a little fun!
100% agree. Jokes aside, 50-52 is the sweet spot for me, considering 210-250 gyutos.I agree.
or they have sausage fingers.
I still couldn't find the joy in using gyuto that's taller than 52mm.
What about people who like cleavers…?
Jiro too.Watanabe is so good sometimes I forgot it is just a elongated santoku.
I think they are usually in the low 50s for height, but similar length gyutos tend to be in the mid 40s so, yes?Is it just me or are santokus really not that tall typically? They just look tall because they have stubby little short blades.

Or...Santokus are just really short, poorly shaped cleavers.
And gyutos are short Santokus.
Fair. I intentionally prefaced with “I think” because the thought was purely anecdotal.I don't know if that's true though. I randomly selected 10 santokus from CKTG and looked up their measurements. Only the Saji was over 50mm.
FKM - 45mm
Kanehide - 46.8mm
Y. Kato - 44.7mm
Kohetsu - 46.4mm
MAC Pro - 47.4mm
Tojiro DP - 46.4mm
Takayuki Grand Chef - 46mm
Takamura VG10 - 46.5mm
Tsunehisa - 45.35mm
Saji R2 - 51mm

Does it look like this one?If a 270 x 60 is considered a santoku, then call me Mr Santoku because that is the sweet spot
