Started looking for a "new knife set" to replace a Zwilling Pro set for a home cook. That was last December. That landed me here and the Reddit chef's knife forums. I've read a lot. I'm happy to say I'm no longer looking for a set of knives. I have my knives sharpened ~ once a year from a guy here who uses a whetstone wheel. Perhaps I'll learning sharpening - not sure yet. On the waitlist for a few different stainless Gyutos (which would be my first non-German knife) - hopefully I can get one before I die :).

Learn to sharpen. This forum is a great help. You can get a pretty good setup for the cost of a half-decent knife. No matter the steel, they all need to be sharpened and I'd hazard if you're having you German knives sharpened only once a year, you're missing out sharp knives. Shirogami and Ginsan are two very sharpener friendly steels and you can find them in abundance for not a lot of money.
