I think that is the general idea, the knife’s ‘birthdate’ but I don’t see why someone couldn’t request a specific date, especially if it’s not too far from the actual finish date.
Maybe Kevin Kent's ego is so big it bulges several days ahead.

Hnnnng those honesuki look like fun.
Has anyone tried that barracuda honesuki? Looks super cool, and I'm curious if the unusual shape is still ideal for chickens or more for other types of butchery.
