Shindo offers the best value buy out there. Polish the choil and spine and they’re really something! I’ve given a couple as gifts - never fail to impress.

Haha, I already have a standard Shindo Nakiri, which is plenty of height for my needs.
If I didn’t have a standard I would have bought it. I am contemplating finishing up my choil and spine though. What did you use to do it?

Dude is by far the filthiest enabler on kkf. It all started with 1 nakiri, and 38 pages later, I suddenly found myself ending up with 5 Shindo, 2 okubo, 1 Yoshikane, 1 Shihan and 2 Eddworks.

Oh padawan, you have so much more room to grow. It only really starts to feel like a problem after 25 or so knives. Don't worry, you'll get there.

I’d be happy to save you from the evil donkey, let me take the Okubo Shihan and Edd works off your hands…the donkey is attracted to these things. If you give them me, he’ll loose interest in you

I think I have been inadvertently knife stalking you. The only one I am missing is Unshu Yukimitsu. In fact, I am wholly unfamiliar with him.

I got a custom 230x51 k-tip. It's about the closest thing to a laser I still own, about 3 mm at pinch but tapers to 2 FAST gets super thin BTE and has a scary thin tip. Did a bit of write up in the Mirepoix Musings competition

Lovely steel, I can get it sharper than anything else in my collection and it is legitimately serotonin-inducing to rub on a coticule. Feels pretty hard on board but not glassy on stones. Buttery.

I have the kensaki from him
It’s an amazing cutter but suffers from a bit of stiction
Do you have the same issue with the gyuto?

Yeah it's a bit of a specialist tool for me these days. It is exceptional on softer stuff, likely my best, but isn't fun on hard dense sweet potatoes or butternut. Like one cut will laser through but the next will want to get suctioned in to the butternut. It's weird. Better than my Yoshi 240 though. I just don't love that feeling on a thinner knife so I get spooked and reach for a certified squash buster in that scenario.

I grab it when I'm doing a mandolin approximation by hand. Works well on holy trinity cajun recipes. Oddly enough the grind works well for sashimi/raw fish where some of my more convex knives that are better on cooked steak etc don't do as well. No idea why

That just sounds like good informed decision making to me.
