Kochi KU Gyuto 241x50mm
V2 core w/ iron cladding
Burnt chestnut & horn octo
This Kochi is from the most recent batch from JKI. Received this as part of a trade, and the original owner barely used it. I've used it at home a handful of times over the past half year or so. I have 3 others, and recently picked up the B2 version, so I need to let one go. I touched up the cladding with some natural stone powder to help with the food release slightly, but the geometry is otherwise original. It has the excellent Wakui profile, strong distal taper, forward balance, laser thin performance behind the edge, and good F&F with the rounded spine/choils and grippy burnt chestnut handle. The V2 steel as described by Jon feels somewhere between a White2 and Blue2. Hard to beat at this price point.
