Looking for large gyuto suggestions

Hi Guys,

I'm looking to add a larger gyuto to my arsenal and need some suggestions as to what you would recommend.

I would like 270-300mm in carbon, stainless or carbon clad. Wa or yo handle, doesn't matter to me. I like a solid knife so not really looking for a laser. Since it won't be my primary knife I'm looking to spend up to $400, maybe a bit more if it's really something special, also happy with spending less.

Maz 270 if you like flat spots? Or almost the entire thing dead flat?

On second thought, this seems wrong unless you’re a weirdo. But I’d use the **** out of it.
 
Ichimonji Mitsuhide sells their 300mm semistainless gyuto for JPY 27,000.

Watoyama is awesome in 270 but over your price range. You might be able to find a SS clad version on BST for not too much more though. Munetoshi, Wakui, Kochi (if you can find one, probably on BST) for something under your budget.

I second that the Martell on BST looks sweet.
 
I really like my Fu Rin Ka Zan 270mm gyuto from Japanese Chefs Knife. They appear sold out, but the owner is responsive, and may know if he plans to restock. The one I have came from the Sukenari workshop. For me, it’s a bit slimmer than the standard Sukenari I tried, but still a really solid middle-weight, not dainty at all. Makes me smile every time I take it out. Not much to look at, but a very good performer with lots of edge life (ZDP).

Not all FRKZ knives are made my Sukenari, and haven’t tried the others personally.

I don’t think the White #2 is Sukenari, but a great choice nonetheless.
