Hey all!
I'm new to the forums, but wanted to say hi. I was a chef for 23 years, Michelin starred and seafood focused. Left the industry and want to get rid of some of my collection of rare knives because I don't use them anymore. Once my 30 days has passed, expect some unique stuff from me posted for sale!

Just curious, and completely respect if you'd rather not say, but what are you doing now? I'm always interested in tenured, successful chefs who move on.
 
Not particularly. Unless you "are trying not to be a ******". Because why does a person need to try not to be one if they aren't?

That's the Aussie equivalent of telling someone "Be on your best behaviour", before you go somewhere nice.

Not necessarily an insult (depending on context). Something you might say to a mate who is outgoing and easily excitable.

So OP TedHopson, you can now see how nothing ever gets done around here. This thread augured in faster than most...not that there's anything wrong with that.

I hope your blades are battered and know their way around a cutting board so maybe I can afford one of them!

He's an *******. He's on the West Coast now. Not sure where he's working now. He got fired not that long ago.

And I take it you're not Australian?
Hahaha, no Im not an Aussie either. Im mostly Italian with some English mixed in (hence the last name). In my younger days I was a dick to most people, but I mellowed out as a chef as I got older.

No prob at all. During the pandemic I was forced to close my restaurant, land lord basically forced me out in October of 2020. I had used a company here in LA called Gourmet Imports for 15 years or so as a supplier of very high end products (cheese, oil, charcuterie, etc) and the owner called me and offered me a job. I started off there as a culinary director, and now I'm the Vice President, so running the show. Chefs tend to be ambitious people, so it all adds up.
