Recommend a gyuto?

I’m looking for gyuto for general use.

I’d like for it to be between 210 - 240mm. I don’t really care if it’s stainless or carbon steel, as I like both.

I’d prefer a heel around 2” or more if possible. Wa or western handle is fine. The thinner the better. Budget is about $200 or so.

I’d considered one of these, but not sure about the quality.

The 240 and 210 have — as so often with Japanese ones — a totally different character. See the huge difference in weight. My 210 is a lightweight, really thin behind the edge, allowing a conservative edge without loss of performance. With a surprising food release, though, thanks to careful grinding. The 240 is a real beast. BTW, both are strongly right-biased, even when they come with a 'symmetric' factory edge. The core steel is very clear off-centered to the left. Just as with the former Hiromoto AS.
 
If you like thinner is better the Ikazuchi posted is great laser for the coin. 240mm as these are thin light blades. The AS core is easy to sharpen blade just falls through food.
