Wait you sold your TF Mab 180mm because you liked your Ginga more ??!!I use an ashi 180mm yo gyuto as my sole sub-210mm knife (excluding my deba). It has just enough height to be useful as a gyuto but feels more like a large petty overall.

IIRC there is a 190mm Heiji on BST right now. I have that knife in 180 and 210 and like it a lot.

The 210 petty is a top 5 for me, especially as a hand knife, but ya there do be some *flex*I found the Ashi, Ginga, et al, to be too flexi for tasks I wanted a petty for.

I have to agree. Maybe we should post this is the Unpopular Opinions thread. I had a 180 stainless pretty that I could never get down with. Too flexy, I was underwhelmed by the steel's ability to take an edge. I replaced it with a Fujiyama 210 petty (white 2) that's just awesome.I found the Ashi, Ginga, et al, to be too flexi for tasks I wanted a petty for.
Short sujihiki or long petty. The distinction doesn't really matter. Both have short heels.Wouldn't it be a sujihike at 210 or is the profile slightly different? I always thought a petty was shorter than that.
