Recipe Requested Rib fingers with gas grill

Anyone have a good one? Found them at the store and anything that says rib sells me. Half the price of steak too .

I’m mostly looking for the cook method, seems like it needs to be done to a higher internal temp than I’m used to, and I’m not sure why.

They need to go over 200°F to render out the fat, that means low and slow.
I'm sure you've seen this.

Any braised short rib recipe would work too.
