He's forgetting an important aspect: the fact that the basting butter is really delicious and makes for a half decent sauce.
Goes great with roast potatoes too...

I've never seen this guy before so I have no knowledge of his history. Just a video that popped up in my feed.

Chris Young was the head of The Fat Duck's research and development kitchen, a co-author of Modernist Cuisine, a co-founder of ChefSteps, inventor of Joule, and creator of the Combustion Inc. wireless probe thermometer.

I don't know if he is forgetting anything important here. The question was whether or not basting speeds cooking, improves flavor, helps retain juices, or helps the steak to cook more easily. And the answer to those questions is no. There may be good uses for basting butter, but basting doesn't do much of anything for the steak itself apart from moderately improve evenness of browning.

great that this is tested, and by someone I have in high regard!

Not sure what the fragmentation grenade has to do with this, or what the fun is....fun starts with undoing pins of at least 4 of those and throwing them all together (once upon a time we were 'clearing out' a case).
