I work as a chef and I really like to sharpen my knives )
I have a 180 stone and a Shapton kuromaku 1000 and leather )
I am thinking about getting a 3000 grit stone but there is so much choice I don't know (
I like the Naniwa 3 k but it is expensive ( since I live in Europe )
The suehiro ouka 3 k I don't know if it is a good stone or not
Now I have the opportunity to buy Shapton glass 4K stone at a good price but I don't know that stone either (
Anyone can give me some advice ?)
Maybe there is someone here who lives in Europe selling one of these stones ? )))))
 
The Naniwa Pro 3K is also a well loved stone (it was formerly called the Chosera). It will be a finer stone than the Shapton Glass 3k - more like the 4K to my understanding.

The Ooka 3K is supposed to be good. I've had a Rika 5K, and it was very nice. It does run a bit coarser than the state grit.
 
People seem to really like the Ouka 3k. If it is just a matter of cost, I don't think you can go wrong with that one. You might want to check out the Morihei 4k if you can find one in EU for a decent price as well. All of the stones you mentioned are well-loved.
 
Both, the ouka 3k and the SG4k are excellent stones. Ouka is a soaker, SG are splash-and-go. I would call the Ouka more forgiving, and the SG requiring more precision.

Is the Morihei 4000 stone a good stone ?
 
I only have a Shapton Glass 1k but my Chosera/Naniwa Pro 800 and 3k have much better feedback (to me) than the SG and I feel like have helped improve my sharpening.

Is Amazon still expensive in Europe? I got it from here and I'd say it is worth every penny. Good finishing/touch up stone that still leaves tooth.

Naniwas used to be affordable in Europe. Isn't that true anymore.

The Morihei is splash n go. It will feel better with a 5min warm soak but not necessary. The coarse stones need more water than fine imo. Softer more forgiving stone than NP3k. Feels much more like a mid hard natural than other synths I’ve used.

Of course. Yes, I have and use this stone. An excellent stone. Not the easiest one, but you will learn, and your sharpening skills in general will benefit. I do like the NP3k as well, for very different reasons — essentially the feedback it delivers, and being a bit more accommodating. I could get mine for much less than the actual price, though.

I have both those stones. Both are great. Chosera is finer than most 3ks and is about the same as the Shapton IME (shapton are also finer than most stones but not quite as much as Naniwa). Both stones are pretty hard (shapton is harder) but also quick for the hardness. The hardness will be less 'forgiving' but will make more accurate work. Chosera is a more versatile stone as it can also burnish when glassed over and if you were polishing I would recommend it over shapton. For edges, they will both be very good for a very refined edge. The shapton is thin and dense and hard so it doesn't dish easily but it is a lot more work to flatten.
 
I don’t think Naniwa has an upper hand unless you are polishing. That is why many people like them. They are finer than advertised and leave a consistent and relatively shallow scratch pattern. I also don’t think the feel drastically changes from stone to stone. You will not be missing one stone over the other here so I would honestly get whatever is cheaper. They are all good :).

I have quite a few of both series. Don't think it makes sense to make statements about the series in general: each stone within the series has its own character. That said, a lot of Choseras, and amongst those the 3k, offer a tremendous feedback, both tactile and auditory, which explains the love they get.
