I asked Cristel, and they confirmed that the Castel Pro Ultraply stock pots are a 3 ply disc base and single ply sidewalls.I've had my eye on Cristel for a stock pot. They look like they're pretty nice.
I think the Casteline line is a disc base and clad walls, with removable handles.
The Castel Pro Ultraply line appears to be a 5 ply fully clad, with riveted handles.
That said, the descriptions and photos are VERY confusing to me.
The Castel Pro Ultraply stockpot description suggests a 5 ply fully clad pot, and there's a diagram of the 5 ply construction, but the specification indicates a "Saucepan Mutine (3-ply) construction" and the photo shows a seam as if there is a disc base.
I can't tell if it's a disc base with clad walls, or 5 ply fully clad, or what. If it were disc base with clad walls, I'd probably buy it. I would imagine that it's a disc base and single ply walls, since it makes reference to "Mutine" construction and not "Casteline" construction.
The Castel Pro Ultraply stewpan however, says it has a "stewpan Ultraply base" and seems pretty clearly to be 5 ply fully clad.
I suspect this is similar to Demeyere, where straight walled pieces are disc, and curved wall pieces are fully clad.
If it's enamelled carbon steel then it's usually not a great alternative at all. You zip the bag closed then take the sealer and place the end over the circle on the bag. That circle is actually a valve and that is what allows it to vacuum seal.
Most of their bags require heat sealing and regular zipper bags obviously won't have the round valve.
Still super handy and use mine all the time. If you watch, there's frequently two-for-one bag sales. If I was doing more volume and/or had more space I'd consider a counter top model but this one does the wife and I just fine.
