    I find Masamoto's Honyaki White 2 Kiritsuke is quite nice, ura stays dead straight and I felt the steel is well tightened when I sharpened it.

    Anything paper thin like courgette, radish, potato. Works better than slicer. Also, factory edge are usually quiet dull so you need to thin new Usuba until it's zero grind flat

    Black rust can cause pitting, polish it asap. & Knives are all consumables, just use it. I use Usuba on almost everything and single bevel flat grind chips like nothing else:p.

    I've seen people in japan use silicone because they can fit a thin saw to cut the silicone later, just make sure only use a few drops so only few spots needs to be cut.
