I have mostly always used a victorinox. Curious if you all have any favorites.

Not looking for something titanium or crazy, but just well made and crafted.

Depends on the fish!

Been using the matfer with the hell handle. Handle has been good, no worries about it melting by touching a pan. Decently flexible without being too flimsy for assorted pan fried proteins and baked goods. Noticed the spatula itself showed some corrosion after a few dishwasher cycles. Hasn’t seem to have recurred since then with regular trips through the machine but it was surprising that the stainless part was in fact less than anticipated.

probably a stupid question - are these dishwasher safe?
The copper rivets will probably discolor, and titanium tends to get water marks in the dishwasher, but past that, it'll be fine.

I am happy with the Mercer Hells Handle fish spatula. The GF has a habit of leaving them in the pan and they get melted spots. Having a drawer of melted utensils drives my OCD crazy.
