Hello guys and girls.
I have visited the forum regularly before to read into knives and makers before buying, but decided to get an account today.
I’m an enthousiast home cook and I got into (mainly Japanese) knives a few years ago and got instantly hooked.

Started out with Sakai Takayuki Vg10 18 cm Santoku.
Bought a Fujiwara Teruyasu 21 Shirogami gyuto pretty shortly after that and was satisfied for a while.
Then expanded the small collection with a Takada AS 165 Nakiri and recently with a Tanaka Kyuzo Blue1 180 bunka.

I’m looking to learn more about knives in general, sharpening (I’m a beginner) and I’m definitely looking to buy 1 or 2 knives from the marketplace to expand the collection with new makers and shapes.

Thanks for having me (hopefully)

Welkom hier! Je zult gauw merken, dat je de nieuwe messen pas leert kennen en waarderen na een aantal slijpbeurten, misschien met iets uitdunnen. De meeste komen verre van optimaal uit de doos. Zou me dan ook vooral op het slijpen richten.

In general I agree with Benuser; especially at the beginning it pays off a lot more to 'invest' in learning sharpening and thinning than to just buy more knives.
