Hi I'm Erik from Denmark.

I'm still very new to Japanese knives but I got my first two last summer after lurking here a bit:

Tosa Arai Yami Aogami #2 Gyuto kuroishi 210 mm (aka the cheapest carbon steel gyuto I could find)
Takamura R2 petty 150mm

I'm strictly a home cook.

I'm looking forward to learning much more about knives here.

Hello Erik, glad to have you here. No bad choice, a carbon gyuto and a stainless petty.
My thought was to get a relatively inexpensive gyuto to practice using and sharpening and to have as a reference, and then a very good petty that I wouldn't need to upgrade later.

The balance of the gyuto is ~35 mm in front of the heel, which I really like. I was also surprised how much I liked the Wa handle even though this one seems cheap.

It didn't come with a super sharp edge and I still have a lot to learn about sharpening (and maybe thinning?), so I haven't been able to get it as sharp as I would like on a consistent basis. I guess I need to practice more and maybe get better stones before I upgrade with another gyuto.

The Takamura is amazingly sharp and really beautiful, but maybe the handle is a bit small for my hands (short fingers, big palm). I keep nicking myself with it. :D

I recently ordered the Shibazi F208-1 on Aliexpress, which I'm excited to try out.
