Definitely stainless...love the battleship design, though I find reaching more the gyuto for the extra flat spot

The name "Iron clad" doesn't refer to the metals used in the making of the knives, they're powder steels not iron - but instead refers to the shape of the knives which is inspired by Japan's first iron clad battleships (Kōtetsu).

I do actually haha. I made a little baby end grain board from scraps just to throw in the kitchen goods bag. If I plan to cook a lot, I'll usually take at least one pan, tooI guess you take with you a decent tiny cutting board as well

Yes. I prefer Gyutos to squares in general, but I enjoyed ARM going back and forth from that to my tall Moritaka nakiri. I think I ultimately prefer the Moritaka but they are both nice cutters.has anyone used one of these? sounds pretty interesting
