Unshu Yukimitsu custom gyuto with ebony handle. I asked for 225-230x50 so Kusunoki san came up with this! 230x52mm at the heel, gets around 45mm tall towards the front of the blade. Nice and thin, balance point right at the pinch grip.

Michael at Knife Japan was absolutely wonderful to work with, I can't recommend him enough.

I'm 2/2 so far, the Okahide butcher I got was also a homerun. Plus Michael is so good to communicate with he can steer you in any direction if you're stuck.

I've only done carrots and celery so far and it feels similar to my Kochi V2 gyuto in the super thin bte department, wants to bite in to the cutting board a bit. I forgot to say the f&f is well done here. The spine and choil are all rounded, the KU is so smooth I kept checking to see if it was lacquered. Clean handle install
 
Thought that I really wouldn’t get anything this year but sometimes you need to make exceptions, especially if the knives are made by Mr. Nakagawa and sharpened by Morihiro hamono.

So so happy I could get them. The ginsan mini cleaver is an absolute beast, one of the most fun knives to use I’ve ever handled.
Do I need to try Mr. Nakagawa’s white 1 and vg10 to round off the collection? o_O

I got an absolute heater here. I don't name knives or anything, but when I first opened this one up I'm like...this is the dark knight lol. My first from Evan.

135CR3 honyaki with such a crazy hamon and the most insane banding ever.

Might as well give us the deets on the gyuto as well. That wide bevel is 🔥
The makers are the same, but it’s in blue 1 and 240 mm! The grind is superb, but i’ll put on a different handle first. Looking forward to comparing it to the blue 2 gyuto I have from the same two makers.

Got it from knivesandstones. Surprisingly, their shipping was very cheap so I couldn’t resist.
