I guess it's trending. My Tetsujin 210mm gyuto arrived today. Amazing grind. You can see the glassy sheen on the carrots. Yoshikane-like performance after touching it up on a 4k Shapton, the OOB edge was pretty dull. It's definitely doing the thing I have read about here where its so clingy it feels like its wedging but its actually just suctioning the material to the surface. So much so that if you cut slowly the carrot slice will cling hard enough to the blade that the last 1/8" of cut wont even slice, it'll just tear off instead. Never seen anything like it. Needless to say I am looking forward to getting a bit of patina on this thing to counteract that.

I got one!! Otsuka Bannou Ao #1 160mm. 4 month wait. It's absolutely fantastic. Michael put an order in for 5 160s. I had an order in for the 140, not thinking to ask if they did larger and he contacted me seeing if I'd be interested in a larger version. So cool and cuts very well. I'm smitten.

Thanks. I remember reading about his reply after being asked about which steel he thinks is the best. He said, "125sc for the kitchen nerds and 145sc for the polishing nerds."
I'm neither but I said damn, let me buy one of each then just in case, lol.
