Having an okubo nakiri, I'd highly recommend that maker. The meaty spine, durable ku, and nice convex grind are all excellent. You can always ask for slightly different profile if you don't like what is listed.

I've had that one saved in my bookmarks for a while now.

Sure here's a pic. I am kind of joking. But also kind of serious. I like a santoku-ish profile on a big ass knife.

This is torture… I just checked my wishlist at KnifeJapan - 17 knives, about a third are santoku

I bought a Mikami wa bunka a few days ago, should arrive this week. Technically a bunka but the profile says santoku to me. Still are a few in stock, including a 175x53 that looks interesting.

Other than that, I’d probably go with the Okubo. I mean, look at that profile… also, nice specs (170x51) and banging HT of aogami.

Or this Yoshimitsu. Never tried this smith before but his KU looks nice.

I know it's technically a wa bocho but same difference. This mikami came in today. Pretty cool. Knife Japan has the best packaging I've seen for shipping, and dhl express included is super nice.

Congrats. Both Knife Japan and DHL are awesome! I had a long delay and a tiny handle crack (that Michael identified and told me about) in my last order so Michael included a coupon.
 
Uh, really it's up to you whichever you choose. Just don't expect the grind or fit and finish to necessarily be great. Ask Michael at Knife Japan or look at pictures carefully I guess.

My personal favorite -- none necessarily. I just like trying a whole bunch of makers.

From the site, I've tried knives from Okubo, Ikenami, Otake Te-uchi, Nakamura, Takahashi Kajiya, Unshu Chuzen, Unshu Yukimitsu, Mikami, Kawatsu, Kono Uchihamono, Otsuka, Shigemitsu, and Moriya Munemitsu.

Fit and finish is all over the place, of course.

Oh I totally get the rustic aspect and that's what I love about them. :)

Can you tell me about unshu chuzen? Can't find much info on the web, would be cool to see the swords he makes. How are the grinds? Any opinion on his heat treat? Seriously considering that hap40 santoku
 
Unshu chuzen is the brand of a mukansa sword smith in Okuizumo. He died last year. The hap40 santoku is probably made by a different maker that he brands under him.

His carbon steel knives are made by him though. The grinds are on the more middleweight side -- not crazy thin like high performance knives here. He's some info links from the one I sold:
