I don't remember if this has been posted, but I came across this whole series of videos of local cooking in Europe. Very intimate and interesting peek at life there regarding traditional home cooking.

My thought is he’s working on the cross-sectional profile (thinning) first and then tuning the edge profile once he’s addressed the overall cutting geometry.
