Put in a little work before kitchen work starts.
What do you do with all the stock handles you replace?
If I can’t save them, I break them. In this case today I broke all of them. Hot water didn’t work and they were burnt in and glued so good.
The old handles was in good condition. Why did you changed them?
Updated Nine collection. I thought it would take years, if not decades, to amass a collection like this...

Me and magnolia handles don’t get along at all…

clearly the new handles are more beautiful.
Came back home for vacation and was welcomed by some old friends! Didn’t realize that kiwis could develop patina maybe I’ll end up getting them rehandled with some exotic wood or epoxy at some point

Magnolia handles are basic handles. I personally think that it don’t feel right to have them on nice knives. Plus they don’t feel good on hands in due time.

I'm not a small gyuto fan, I'll go 210, but they often feel too short.
Here're two 180s I've had the pleasure to use—Takamura and Raquin—both are fine knives.

With 1 time use so far. I really like it. I guess im just scared to scratch up the mirror finish. Soon i’ll be playing with it more at work.

Nah, don't stop buying Gyuto's. Buy leather sheaths and carry them every day
THAT'S COOL! 
But, tbh those little blades are very useful for many things every day. It's cool to have something sharp in your pants (I mean, something sharp out of steel of course!)

Anything you are eyeing in particular?
Be very careful in NY. There is insane knife laws there. Not sure if it is still a thing but for a long time, Spyderco wouldn't even ship knives to the state.
I don't have any idea about Japanese handles. And the same about wood.
Of course, the handles you have put on the knives is more beautiful and looks better.
