If I count the Shihan 210 gyuto I have on order I'll have 10. And still no deba or honesuki. Probably will never try a deba but at some point I see myself getting a honesuki. I breakdown chicken more then I do others.
I had a cheap (like $75ish) honesuki that worked fine but I recently picked up a Takeda on BTS and it's utterly awesome. I'm with you on the deba, I don't buy whole fish often enough for a dedicated blade.

Ya know, I posted this picture in a bunch of places and that Opinel Kid Knife has probably gotten the most comments of all.
I have the same knife! I bought it for my daughter. She loves to use it. Has an accompanying finger guard for the other hand

Conclusion is that I should sell a couple of 250mm gyutos and the deba and buy a couple of cleavers...

I only want to know what food prep you're doing with that kiridashi?
There are two in there. They aren’t included in the 50 number. I have used them for stemming strawberries, but lately they are mostly for stone testing/polishing practice. I do use them for cutting paper and stuff like they are intended for.
 
I don't own all that many relative to some folks here, but here's what I acquired in 2022. I have maybe another 6 j-knives from 2021 besides these. I feel like I bought way too many knives in 2022 so I've been thinning the heard a bit and hoping to be a little more deliberate in 2023.

Top to bottom in the middle column: Steele, Kamon, Markin, Breg, Newham, Smedja, Birgersson, Adonis, Spare.
Left two: Hanson, Steeleworks
Right two: Majime, Ayling

IMHO you've had quite a 2022, both in terms of quality and quantity. Beautiful!
