Beef and broccoli last night. Tenderizing thin slices with water/baking soda and velveting is a game changer. Love this meal.

Dang. I was gonna reach out to your family to see if there were any knives for sale! 🤣
There will be more such chances to acquire my cutlery... I have only officially put down my wishes for who the dog and M1 Garand should go to, so take your best shot.

Simple reverse sear tritip, basted in butter and thyme (needed another 5 min of rest, but it was still super juicy)
One on the left will be cooked this week with a spice rub and I may marinade it first, we'll see...

I got to start cranking the blast chiller with a bit of sashimi.

The fish is Aguglia, a mediterranean fish wich have green bones.

Is caught without hooks, but with a wool string. Its very small tooths get tangled in the wool

My plating sucks, and there was a pitiful imitation of a nigiri in there but got stolen before the picture...
