Any thoughts on ikenami gyutos? Decent price and the specs look nice. 270x55 315g

I haven't tried their blue HT, but I really like the shirogami 1 Bannou I have from them. It's ground relatively thin, and the bevels are concave, but mine's KU shiro and this one is ao kasumi, so the details could have more attention given to them.

Such a good bruiser knife that can do normal board work as well. Has stood up to many rough tasks like taking fish heads off. I can do a lot of stuff with this guy and its just fits my hand very well. Bevels aren’t perfect but the core steel is very strong. Pairing this with my Ashi Ginga Western Aeb-l gyuto has been a very efficient set.

Just got in my first knife from Knife Japan and I’ll be a repeat customer. Somehow arrived in three days via DHL with free shipping AND a $10 coupon off for my next purchase.

I've exchanged a few emails with Michael in the last couple of days to get a custom Unshu Yukimitsu (going for a 255x53 ku gyuto), and yep he's an absolute pleasure to do business with. Not surprising that he seems to have great relationships with the knifemakers too.

I have a 245*55 that is about 2.5 mm on the spine at the heel. Flat grinds... very fun to use.

I'm super curious to see how @Beerzebub 's custom come out at the spine. I see they're listed at 4mm on KJ, my 230 K-tip is 3ish above the heel but thins out quickly. I'd be tickled with a thicker one

That's very cool, distinctive profile. Looks almost dead flat.
