If I don't find a Munetoshi 270 I think this is what I'll end up with. Definitely let me know your thoughts if you pull the triggerAny thoughts on ikenami gyutos? Decent price and the specs look nice. 270x55 315g

I haven't tried their blue HT, but I really like the shirogami 1 Bannou I have from them. It's ground relatively thin, and the bevels are concave, but mine's KU shiro and this one is ao kasumi, so the details could have more attention given to them.Any thoughts on ikenami gyutos? Nice profile. I really like my 210 suji and 180 bannou. Concave bevels, midweight and stiff, quite thin BTE, feels very balanced in hand. I bet the 270 feels balanced as well.Any thoughts on ikenami gyutos? Decent price and the specs look nice. 270x55 315g

I have other Unshu Chuzen knives (KU finish, ironclad) and really like them. This line looks different in many ways but it's a solid maker for sure.Anyone try either of these makers?

Such a good bruiser knife that can do normal board work as well. Has stood up to many rough tasks like taking fish heads off. I can do a lot of stuff with this guy and its just fits my hand very well. Bevels aren’t perfect but the core steel is very strong. Pairing this with my Ashi Ginga Western Aeb-l gyuto has been a very efficient set.

165x50 and 159g, isn’t it the perfect small nakiri?

I’m kinda torn between that one and this one:

I have only seen yours and one other with this notch, nice.Yep that’s exactly how it came from Knife Japan. I believe it is taller than the other Mikami nakiris I’ve seen anyways.
Just got in my first knife from Knife Japan and I’ll be a repeat customer. Somehow arrived in three days via DHL with free shipping AND a $10 coupon off for my next purchase.
someone should grab that 240 Mikami yanagi!https://knifejapan.com/yoshimitsu-kajiya-nakiri-bocho-155mm-shirogami-2/
Just saw this one - have an Unshu Yukimitsu santuko on the way, so maybe it will have to be next month. Some just grab you - mini Takeda bunka style? Good price, as always from Michael.
Otherwise either of these;

Lasers!I've exchanged a few emails with Michael in the last couple of days to get a custom Unshu Yukimitsu (going for a 255x53 ku gyuto), and yep he's an absolute pleasure to do business with. Not surprising that he seems to have great relationships with the knifemakers too.
is it stiff all the way?Lasers!
I have a 245*55 that is about 2.5 mm on the spine at the heel. Flat grinds... very fun to use.
definitely stiff... I can send a video of me trying to flex it if you want.is it stiff all the way?

I'm super curious to see how @Beerzebub 's custom come out at the spine. I see they're listed at 4mm on KJ, my 230 K-tip is 3ish above the heel but thins out quickly. I'd be tickled with a thicker oneLasers!
