The second honyaki knife from the collaboration between me and Matt Sicard for is now available!
The blade
This time we went with our favorite model, the gyuto. A slightly shorter blade with 205mm of cutting edge; just enough to feel virile without depriving others of being able to use it! The steel chosen was Sheffcut for its beauty of the hamon and its good cutting retention coupled with an awesome HRC of 65. I have a gyuto honyaki with this steel at home and it's a pure joy to use. Like, really!
The visual
The visual, let me talk about it. First of all, even before I received this knife and even before Matt put on his blacksmith outfit and his SpongeBob slip, I already knew that I wanted to do reverse polishing. I wanted to challenge myself in order to improve and learn. After the endless preparation until the mirror effect, I etched it and then I discovered a beautiful activity in the steel. From that moment on, I decided that I wanted to keep as much detail as possible for the final result. It was painful and took a lot of time to get the martensite uniform. But I'm really happy with this visual which is both unique and different. In fact, I think I never saw this kind of polish on a honyaki blade before..!
The handle
If you want to do something different, you might as well do it until the end! I ordered spalted tamarind precisely to be able to make this handle for this blade. It's full of details, irregularities and above all it's full of personality. For the end cap, I am offering a new material which is carbon fiber with gold leaf. Everything works here and the gold color brings out these accents of yellow in the wood and the black which brings out the veins. Really proud of this handle.

Me and Matt decided to collaborate together to offer very unique knives with an attention to detail and finish. Being both passionate about Honyaki blades, this collaboration highlights all of Matt's his in-depth knowledge of steel and blacksmithing. Being both Canadian, I am really proud to be able to actively participate in showcasing local talent.
For my part, my goal is to push Matt's creations to the maximum in order to reveal all the beauty that a honyaki blade can offer. I'm also the one who takes care of creating a custom handle and doing the final sharpening.
