I jumped the gun and posted his pics already but @eddworks did such a damn good job on the koa handle I must share since it came in today.

253x60, 255 grams. 5 mm AEB-L stock. Feels so good in hand. Silly distal taper, deliciously thin behind the edge.

Looks fantastic, handle looks great. I wish mine was a little taller after seeing this...
 
was lucky enough to win the lottery to purchase this yanick just after new years. 239x54 rio rosewood handle. 7 layer san mai. yanick’s knives are simply magnificent. this one has a slightly flatter front 1/3 and a noticeably lower bevel with a sharper shoulder. put it to work today for some game day prep. veggie burgers and guac.

3.5 to 1 mm spine taper

Picked this up off an auction site, so technically new to me. Good grind, great steel, unfortunately not in the best condition. Fixed by hand on stones while maintaining as close as I could to the original geometry. Quick refinish leaving some deep scratches not worth chasing. Looks like there’s a faint carbon migration line so maybe hand laminated, hard to tell.

If anyone recognizes the kanji or maker, let me know, I’d love to have some background info. It arrived wrapped in newspaper from 1996, so I’m assuming it’s at least that old.

Takayuki Iwai blue 2 240 mm gyuto from Zachocho. I believe mine is the exact one in their product page: Takayuki Iwai aogami#2 damascus gyuto 240mm

Thickness, heel: 4.5 mm
Thickness, 1 cm from tip: 0.9 mm
Weight: 213 g

I bought it thinking it would be catch and release but it’s actually really nice. Thin tip but more robust spine toward the heel, thin behind the edge, really nice mid weight knife overall. I just cut a few onions so far, so we’ll see…

Had my eye on these guys but held off because the grind looked mostly flat - at least based on the choil shot. How is it IRL?
 
New to me Mazaki 270 (278 x 56). My first Maz, a bit late to the party, but I really wanted to try a knife that has a lot of taper for the first time. This is the 2023(?) profile, reminds me of a sabatier profile. Good convexity, hardest white steel tried on any knife so far, and bevels are mostly clean!
