But man, does Dan Bidinger make an amazing knife.

Generally I’ve found that smiths make a variety of geometries and I tend to gravitate to specifics of them. But I really like all of Dan’s variations and they all cut like what I’d imagine my ideal version of a laser/midweight/workhorse would cut like. Variations of smooth cutting correlating back to a balance of food release.
 
Care to share a little more about the first duo
Sure! Here are the product page links, but basically White #2 225mm Gyutos with beautiful fit and finish by unknown Sakai craftsmen. One has a full Kasumi and the other migaki finish. The grind on them, there is a slight difference based on the test cuts I did. They make me think of Kono and Takada in that beautiful lasery way.

I’m not sure what is up with them as it seems Tosho didn’t have many (any?) other than mine.
 
how do you like the Mikami and the Homi Kajiya?

also, what size is the Mikami? I got a 165 bunka recently, super stoked with it
I really like the Mikami so far. It is 167mm. Very nice performance. I will probably trade out the handle. The Homi Kajiya (165mm)needs a sharpening before I can judge it properly.
 
185mm Shibata bunka, matches my 130mm Shibata ko bunka. Seller’s image.

And 1,800g ‘chocolate box’ of ungraded Mikawa/shiro nagura (though the figured one center left may well be an amakusa, a fine grit sandstone like a Hindostan). The cubical ones tend to be koma. Won this lot this morning for 7 cents/g, though shipping will bump that up a little. It will be fun grading them. Seller’s image.

210 Itto Ryu Gyuto by Wakui, featuring some patina from dinner prep.

Initial thoughts. The handle leeched dye as soon as I wiped it with a towel and was installed crooked. It is quite a bit lighter than my older 240 (148 vs 195 grams) but consistent with product specs. Finish wise the tsuchime is not as pronounced and there is a bit more nashiji, when compared to my 240. Like all Wakui it performs well and the spine and choil were nicely rounded.

Overall, super impressed for $120 + Tax.

Kamon Production v2. I remember when I just got to this forum and really had my eyes set on one of these. Finally got the chance. Really good balance and thin in all the right places. Excited to try it out
