Nishida usually does the wide bevels, and Myojin does convex (not sure if all of them, but he does the ginsan for sure).

It depends. Sometimes they publish them, sometimes they don't. Also depends on the line, and the retailer the knives are going to. But I would worry less about the name of the sharpener in this instance, as Morihiro who is a top tier sharpener who trained Myojin and started the Fujiyama line runs things in that department for kagekiyo.

I have a kikuzuki uzo, too. Mine has a different profile than the above one. But it seems like that knife fits perfectly for what you’re looking for.
