hopefully he doesnt mind if I share.
Hi Matt, I noticed the title stated blade-only, so I changed it. These have handles. Looks like I missed changing the description of the 240s. These are 2023 profiles. Edge length of the 240s runs about 250. The 210 that I checked ran about 215

I’ll get a spine photo, take my pictures outside and rushed to get in before a storm
What’s happening here? Looks interesting

F+F is excellent - balance is nice, edge is a razor. So the Ku series is exactly like TF then? Good metal, terrible grind. I supposed less wabi sabi then TF?
Hammer mark from spine tapering rather quickly. I have the same Mazaki nakiri:What’s happening here? Looks interesting

Well you would say that.....F+F is excellent - balance is nice, edge is a razor.
I took a few shots of the 210 arrived yesterday (measures 220 actually they are on the long side) if can be useful. Tip is insanely thin, very well finished, balance is slightly forward the pinch. Didn't like the handles as well in photos, much better in hand they are bigger than it seems. Just extremely rough and dry, I immediately sanded and waxed as they should have been in the first place.View attachment 254976Spine shot from Joe

first thing i thought too, my shindo bunka has the hammered thumb groove as well.I swear I'm not trying to beat this horse in to the ground, it's actually pertinent, but my Shindo's all have a hammered thumb groove like that on the left side of the blade. I thought it was a happy coincidence till I get another. I quite like it, hope Mazaki keeps that
Maybe if they add more other payment methods then the knives would sell. I personally dont trust just paying with card.More 270mm Tangetsu, surprisingly those and their blue one Damascus cousin haven’t sold out while people are chasing Tanaka x Kyuzo

I asked maksim about the 180 Toyama Nakiri in kurouchi vs kasumi finish. He said its the same grind and dimensions. Published dimensions on Toyama 180 are different than Watanabe 180. Burnt chestnut handle and cheaper price on KU so I ordered one. Only one left at JNS!Migaki and KU gyuto seem to have different grinds. Nakiri may be different
Toyama aogami#2 gyuto 210mm vs Toyama kurouchi aogami#2 240mm gyuto
KU looks like symmetrical-ish wide bevel, migaki is asymmetrical full convex
None now It looks just like the Watanabe Pro I used to have. Still have my Toyama stainless clad. So will see how this differs.Only one left at JNS!
@jjsoviet just instantly selling I imagine? Cool knives tend to do that…
That's what she said.Woah...that tip is tempting me
